Food insecurity, climate change, and

malnutrition remain pressing challenges across Sub-Saharan Africa, demanding

integrated innovations in food processing and nutrition. This presentation

outlines research advancements led by Melaku Tafese at the Ethiopian Institute

of Agricultural Research, emphasizing value-added processing, biofortification,

and the sustainable use of underutilized crops. Through interdisciplinary

methods in food engineering, bioprocessing, and functional food development,

the work presents scalable solutions to enhance dietary diversity, food safety,

and shelf life. These efforts contribute to transforming regional food systems

while aligning with global sustainability and health equity goals.
